SNOWMAGEDDON 2016. Let the journey begin...
And so it begins. No, I am not a professional blogger, nor am I a writer. No, I did not major in English, and I am still trying to perfect my typing skills.
But what I have are ideas, thoughts, inspirations, experiences, plans, dreams, illustrations, frustrations, devastations, miracles, discouragements, pick-me-up moments, “believe in the impossible” state of mind, loneliness, dare-to-dream visions, I must be “cray-cray” episodes, immature decisions, “have-you-lost-your-mind” situations and HOPE for everything about this journey we call life. As well, immeasurable FAITH.
As a matter of fact, after posting a few photos of my homemade meal of peppercorn turkey burgers and baked mashed potatoes, my niece, Caroline, suggested that I should consider blogging my posts.
My blogs would be written in a language which resonates with all walks of life, regardless of your personal belief or lifestyle.
I will use this platform to divulge my experiences, thoughts, ideas and interests on a variety of topics and issues- food, family, motherhood, friendship, community, entertainment, music, travel, life, my journey, as well as debatable and controversial topics.
You can choose to read and identify or simply agree to disagree. But my hope is to enlighten you through many areas of life including my love for cooking and baking:)
Let me begin my journey of a million expressions by sharing with you the lovely dishes and yummy baked treats I prepared over the snow blizzard of 2016.
Although not a big fan of turkey, these homemade turkey burgers infused with freshly grated tri-peppercorn, sliced green peppers, sweet red onions, and spices are incredibly delicious. So easy to make and a wonderful meal that kids love (mine do a whole lot). Mummy taught me about baking mashed potatoes when I was a young girl. It brings variation to the preparation. Just a little flaky, buttery, melt-in-your mouth deliciousness. You should try baking mashed potatoes sometime. Just use an ice cream scoop or even a muffin pan will do.
This gorgeous noodle bowl was inspired by my handsome brother who loves to cook with Shitake Mushrooms. He makes this incredible Chicken-Shitake steamed dish that is to die for<3.
So, I decided to create an entrée that would incorporate the use of a variety of Asian herbs and veggies to make it VEGAN friendly including bean sprouts,Thai basil and tofu. The broth is made from dried Shitake mushroom and my concoction of homemade spices (shhh….I can’t reveal them all…it’s a secretJ)
Then, there’s the option for optimum protein which is prepared with sweet prawns and slices of steamed beef. To say INCREDIBLE would be an understatement, if I’d say so myself. Trust me, I am my biggest critique.
Trust me, it was an arduous night, with the kiddos and I convincing ourselves that we were partaking in "healthy" eating by overloading ourselves with plenty of fresh, citrusy pamelo slices after consuming a whole batch of freshly baked pineapple tarts:) No seriously!
Although the snow storm brought almost white-out conditions, our home was warm and richly filled with love, laughter, good food, happy tunes and fellowship. It was truly memorable, spent with my wonderful kiddos and gorgeous feline babies.
